Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, peeled and diced
- 2 potatoes, peeled and cubed
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 can (400g) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- Salt and pepper to tasteHeat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
Add the diced carrots and potatoes to the pot and cook for about 5 minutes, stirring occasionally.
Stir in the sliced zucchini and chopped bell pepper. Cook for an additional 5 minutes.
Pour in the can of diced tomatoes and the vegetable broth. Bring the mixture to a simmer.
Season the stew with dried basil, thyme, salt, and pepper. Let it simmer for about 20 minutes, or until the vegetables are tender.
Taste and adjust the seasoning if necessary. Serve the stew warm.
