Ingredients:
- 1 large pork shoulder (about 5 lbs)
- 2 large onions, sliced
- 4 apples, cored and sliced
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1/4 cup apple cider vinegar
- 2 tablespoons brown sugar
- 1 tablespoon smoked paprika
- Salt and pepper to taste
- Fresh thymeRub the pork shoulder with salt, pepper, and smoked paprika. Make sure to cover all sides evenly.
In a large slow cooker, layer the sliced onions and apples at the bottom. Place the seasoned pork shoulder on top of the apple and onion bed.
Mix the chicken broth, apple cider vinegar, and brown sugar together. Pour this mixture over the pork.
Sprinkle minced garlic and a few sprigs of thyme around the pork.
Set the slow cooker on low and cook for 8 hours until the pork is tender and falls apart easily.
Once cooked, remove the pork from the slow cooker and let it rest for a few minutes before shredding.
Serve the shredded pork with the cooked down apples and onions, and drizzle some of the cooking juices over the top for extra flavor.
